Kindly open samsung messages app then make it default app for messages. Now it will also change colours with themes. Samsung uses Google messages as a default app so that's why you have that problem.
May be its a app crash you can reinstall the app but first you should go to app settings then force stop the app. Option will be available in settings then open the app again. Hope it will work
