Galaxy Note1. OTA- Use mobile data or WiFi to download monthly security patches. 90% of the times there will not be an issue because they are just security defination from Google, but 10% of the times there are tweaks and bug fixing as well as Security patch. And there are chances of software error on installation error Because your phone Won't check the downloaded Update if that's complete or not.
2. Smart Switch- Must use for Major OS updates like NEW ONE UI version, new Android version etc. Why, because your whole system OS will be altered, This can be your kernel, Your UI, android version. And here doing this over MOBILE DATA OR WIFI will give you more chances to install corrupt software on your Device.
When you use Smart Switch it will install complete firmware on your Device so even if your phone had Previous software loop holes or corrupt software, That will be resolved too.
3. Odin- This is the best BUT FOR ONLY trained persons. Normal users aren't supposed to use that tool to flash their Phone's because Samsung don't provide you Support or Official firmware to flash via odin. So if somehow something went wrong you may be holding a dead soft/hard bricked device.
To conclude Software updation, either it's OTA or Smart Switch can cause you errors or even your device can stuck in boot loop or your device can be soft bricked.
But if you are doing it with Smart Switch you have option to Emergency Recovery, means Flashing your phone again with official firmware so that your phone can work again. So you can decide which option is better.

Galaxy NoteI have faced this issue and had to rush to service center as my mobile is being used by my son for online classes.
Go with OTA updates but with speedy internet connection. And in case of any issues visit service center for re installing os.
