You won't be able to do it from smartswitch you need odin. But if you never heard of it don't try just backup your data and go to the service centre.

I will suggest you to always update your phone using PC Smartswitch as it downloads the whole OS thus eliminating any chance of a corrupt system file and also it keeps the phone cool.

S21FE downgraded to a quarterly update channel so you'll get updated every 3 months. Also it is pretty much confirmed that the phone will not get One UI 8.5 unless samsung becomes kind enough to give the update.
