goto Settings > Battery and Device Care
on the top-right corner of screen, tap on the 3 vertical dots, and choose Automation. Turn off toggle Auto Restart at Set Times, or change schedule by tapping on it.

on the Samsung Members app, tap Diagnostics -> Power Restart Status, view Restart History, try to find the cause and act accordingly, some 3rd party device admin apps may restart the system too.
Otherwise, tap on Support tab -> Send Feedback ( ask questions). Attach the log file for investigation.

My friend had m31 and he was facing this same problem.
At first he was experiencing 1-2 restarts and then after some more upgrades given by samsung his phone getting restarts in every 5 min of usage.
Now he downgraded to Android 10 with powersaver mode to underclock phone's processor.
Firstly if you're using SD card then try to remove it and observe and if problem persists then you have to downgrade your device and wait until samsung releases stable version of Android 12 or 13.
Their updates feel like Beta version of firmware.
Everytime they carve out a major issue.
Defend your motherboard from samsung.
I saw my friend's M31 Condition and i was shocked what samsung did to that device and you can youtube it , it's the issue facing by majority.
