Galaxy SI updated my S21 FE snapdragon variant to One UI 6, and noticed some major issues in camera quality. The camera quality is just totally degraded in new update. The image processing is just worse. Attached are some sample. The photos are way too boosted. Feels totally un-natural. Edge detection in portrait image is also worsen in this update. Look at the image of my dog. The focus is now hit or miss, light on the subject is also bad now. Took multiple shots even with focusing on subject but not major improvement.

Galaxy SI understand that. Both of the photos are taken at different times but with scene optimisation turned on. And both scenes in reality aren't that different. Which is exactly my point. The post processing has changed drastically. Even with new update of one UI 6 which I got yesterday, portrait shots are not at all improved. Also image stabilization has got a hit. Earlier I didn't had to think twice of how portrait will turn out in One UI 5. Now I am hesitant to take portrait shots.
Some portrait shots which I took today. Look at the stabilization and Bokeh.
Bad Bokeh effect
No stabilization
