Any advice on what I can do? S23 FE still stuck on One UI 5.1. Phone says there is an update, but when I try to update, there is no update available.

This was a solution by one of the official Samsung moderators in Nov 2023 and edited in April 2024
You may be able to force the update to go through if it is indeed there and being sent by the carrier. This guide can go through the ways you can update the software on your device: https://www.samsung.com/us/support/answer/ANS00077582/
You can also try the clearing of your device cache partition and repairing apps, which can help with device behavior:
- Power off your device.
- While the device is powered off, simultaneously press and hold the power and volume up buttons.
- Once the Samsung logo appears, release both buttons. Your device should boot into recovery mode.
Using the volume buttons to navigate and the power button to select:
- Navigate to "wipe cache partition" and press power.
- Select yes to confirm.
- Navigate down to "Repair apps" and press power.
Next, check to see if a third-party application may be responsible for this, using the guide on Safe Mode: https://www.samsung.com/us/support/answer/ANS00062983/
If the behavior continues under Safe Mode, it may be time to try a factory reset. Beforehand, try to back up everything you do not wish to lose: https://www.samsung.com/us/support/answer/ANS00062029/
