Galaxy SI have a new S10+ and enabled dark mode. However, the Google Search Bar is black and I'm unable to change it back to white without shutting down dark mode.

still you can able to change the color to white when enabled dark mode by customizing the widget. Do it by following the below steps:
1. Click on G in the google search bar
2. Click on 3 dots present over there to see more settings
3. Select Customize Widget option over there from the list and change the color to white
