When would I get official One UI 2.0 update?

I am using Samsung Galaxy Note 10+ and I had registered with One UI beta 2.0.

I have already updated to 4th beta update and also the hot fix update which came later on with January 1 security patch. 

So when would I get official One UI 2.0 update?? as its already December over and started January.

In the list, it's mentioned that the update for Note 10+ is already completed.

Check for update and you should have it now. Remember as you are already on Beta program the official update won't be in huge size and it will be around 100 or 200 mb only. I think you might have already installed it.

How do I figure out that whether I have Beta now or Official one?

Check ur built... if it is zsl7 then u r on beta version.. and if it is N975FXXU1BSL7 then official.

sometimes it won't show any sim

Reseting your device will help, backup all your data and reset your device, check for condition of your sim tray and check your sim.
It can be that your sim has got damaged, get your sim swaped in case issue is not solved by reseting your device
