I do not use Google Pay or Google Wallet; yet, whenever I want to share something, the Google Wallet option appears. Does anyone know why this is happening?

Mine too. You can remove it through the Google Play Services share settings. You can even edit it (look at the pencil icon at the top right corner).
Bro, Android is made by Google, and it doesn't want to leave any opportunity to steal data or push unused apps into Android phones. I recently saw this on my phone too. I had Google Pay, even though I haven't installed or used it till now.
