No you don't need root , the device status will be official knox 0×0,To sideload, you have to apply update through ADB , no need odin for sideload updates
All you have to sideload the beta 1 and then beta 2 ,Remember when the official oneui 7 released you have to flash through ODIN and then you will get monthly OTAs
