Do ram comsumption increases when we upgrade to a new android version?

It depends. Like of the newer version has more service to run in the background, then yeah it will or otherwise it won't

Remember, play store is not working as expected in android 12. We can't update or install apps from playstore

It is working fine for me. I even updated all my existing apps after the update.

Nope....new android doesn't mean more ram consumption ...its up to optimization of new android and current hardware by the company

For Android 12 now you can assume the answer as yes it is using a bit more ram than Android 11.
