Well there's no major difference to be honest.
But some are:
1. Smart switch downloads the full OS. So the download size will be much larger than The OTA, which only (in simple words) adds the new things and releases the update.
2. Smart switch is preferred when you phone is unable to update or the OS got corrupted and you ca no longer factory reset etc. in that case you can try flashing you OS again using smart switch.
now it's your choice what to do as per your need.

According to me while you are updating any phone via OTA do not use the phone untill unless the software is fully downloaded. just start the download and keep your phone away by this your wifi or mobile data will be used only for firmware and network would not fluctuate.
According to me.

no worries, you can do whatever you want with your phone. until it is 100% and you pressed install. then obviously you need to keep your phone down.
but if my network is **bleep** as the flat-earthers I'll definitely use your method as nothing will load when the update is downloading. I guess.

If you have reliable data connection whether wifi or LTE its simple n hassle free to update via ota. With smart switch its really not worth it to update as it install whole firmware and you have to restore all data and install many apps again. For someone like me who have more than 100 apps its cumbersome to go through all of it again.
