It's a Gallery App Bug. I've experienced the same with OneUI 6.1. Actually as I noticed, what happens is the photos you'll find in the recycle bin of gallery is the clones of the original, that you've kept in any folder. Even if you emptify the recycle bin, the original photo can be found safe in its original folder. With me this happened. I think your case is also the same.
