Galaxy Sselect what you want to backup.
for me, i select contacts, messages, call logs, apps, home setting, wifi settings etc etc.
take a backup. That's all.
For photos i use Onedrive Photos backup. This is premium service from Microsoft (i worked for Microsoft so they gave it to me for free for Lifetime)
Else you can use any cloud service to backup photos.
Alternatively transfer using USB to PC or Mac.
