Galaxy SDoing so may degrade your battery performance. In fact when your device reaches 25% or 20% connect your charger. Now coming to your issue of battery dropping instantly below 10% to 3% or 4% in 3 to 4 seconds, i would like to inform you that I've only dropped my battery once to 6% for checking the SOT (screen on time) . Other than this i never dropped my battery below 20% & even when i dropped my battery to 6% i didn't faced this issue.
Now regarding your query of upgrading your S23 to S25 base, i would suggest you to only upgrade if you want that crazy performance of 8 Elite & 7 yrs of OS updates. S23 vs S25 has literally no difference except SoC & that 7 OS updates as i mentioned above. S23 at half cost beats S25. Thus their's literally no need to upgrade from S23 to S25 if you don't need that extra performance of 8 Elite & 7 OS updates.
I hope i helped you. If my information was helpful then do accept this as solution😊
