I found that Galaxy S21 FE 5G unable to record call when wifi calling enable.

I checked all settings but issue remains same.

Not only S21FE every samsung phone can't record calls while WiFi Calling is enabled.

Yes,right now there is no official way to record wifi calls

You can enable call recording if you are using Truecaller app. Enable floating call recording button on Truecaller and recording can be done while on Wi-Fi calls. Please click the 3 dots on my post and select accept solution if you feel this is helpful 😊

Mostly devices not only samsung any device unable to call record when connected to wifi calling

Wifi call recording doesn't work on any brands. Don't make it a big issue.
