If you get certain wallpapers from galaxy themes they can also change the style, for example, الهلال (wallpaper can be findable by searching moon) can change the style of the clock, but I have to mention this will also change the app icons.

Tap and hold on lock screen. When prompted, enter your pin / finger print. You will be taken to lock screen customization screen.

Tap on the clock, and change the clock style.

Tap on done on the top right to save your changes.

If it doesn't work, you have to enable it from:
Settings/ Lock screen and AOD.

"Touch and hold to edit" option should be enabled.
