I have all the apps on S21 Ultra updated from Playstore. However when I go to Galaxy Store, it shows lot of updates pending.
Any suggestions or guidance on this?

I think this happens for every samsung smartphone. You can disable auto update in galaxy store, only update the samsung system apps from galaxy store and other apps which you have downloaded from playstore, update those from playstore .
