After receiving  one ui 2.1 update. Single take mode was a major highlight of the Camera app. It was working fine until june update. But after that it start misbehaving. Whenever I use single take mode it suggest only 3 videos no images. This happens using both rear and front camera.I have seen such problem faced by many customers on various phones on the samsungg community website. I want samsung support to look into the issue asap.

Reset camera to default settings once and clear camera cache/data and try again

Also, go to system apps and clear single take cache/data

Tried it, didn't work. I keep getting the message to change the single take settings, but the setting does not exist in the app.

Single take is an AI based feature.
Try to shoot in good lighting environment.

I personally thought it was an error when I used to get 2-3 videos in name of Single Take.
But after taking few shots in day and good lighting, the AI automatically starts taking monochrome, hyperlapse, etc.

I hope it'll solve your issue. Don't forget to accept solution if it does.

Thank you.
