One UI8 is not yet out, that's beta and it is region specific.Another thing, betas have a lot of bugs so you can't even daily drive it without running into issues.

You might have to reset your phone. That's the only viable option left.But if you are technological savvy, you might have to flash a new ROM

Can you please restart your phone on Safe Mode. Then keep it for a while to see if it restarts on its own. If it doesn't then it's because of an app you have installed otherwise the problem will with the device.
