WearablesHi, I have this same questions. I have a Samsung Galaxy Gear S3, and I would like the week to start on Monday. That is, the week cycle for counting steps and floors should start on Monday instead of Sunday. Is there a way to do this?

I've tried Settings - General - Date and time, but it just says "Synced with phone" with no option to change it..

WearablesSadly, after 2 years, I guess Samsung is not providing the answer, so I will.
The problem here is that Samsung Health on your phone is ignoring the Android setting where you set the start of the week. Instead it looks to the region you set, and if that region's default is to start the week on Sunday (like the US), then, Samsung Health will start the week on Sunday, and so will your watch.
If you go to your phones language and region and you set the region to UK for example, which defaults to the start of the week on Monday, then Samsung Health on your phone will reflect that and also tell your watch to do the same.
Personally, I believe this is a ridiculous error in the software design. I understand the watch following directions from Samsung Health on the phone, but Samsung Health ignoring hard settings on your phone is just stupid.
But, judging the response time on this thread, this will not be fixed in our lifetime.
Anyway, you now have the solution for your start of the week.
