What are the major differences between the One Ui and the Core version ?
Does it make any compromises in terms of security ?
And how different is the One Ui in Flagship "S" series and Note Series from "A" series ?

Yes there are major differences between bth the UI.

One UI core doesn't get the KNOX SECURITY features on all devices ... It doesn't get the Altz life, Secure folder, Hardware grade security....

M51, M31s and probably M42 & F62 ( not sure ) only these 4 devices get these features... and the premium S series get tons of more features like Dex,

One UI comes in two variants – regular One UI and One UI Core.

One UI Core isn't a beta version of One UI. Basically it has fewer features compared to the One UI which is mostly found running on other Galaxy phones.

Well, simply put, you won't be getting all One UI features in One UI Core. There are no compromises in terms of security. It all comes down to what you want. Optimization is better in One UI Core because it is lighter on RAM and processor.
