Non US Keyboard - special character not supported under DEX UI 3.0

I just updated my s20 FE 5G to Android 11 and UI 3.0 but now in DEX language specific character's like ö ä ü are no more available and these characters are replaced by the US characters being on the same key - it seems that the support for a few non-US Keyboards got broken with this update as everything was running fine under Android 10 and previous UIs. Any hint or  is it a bug ?

Could solve the problem by "Eingabehilfe zurücksetzen" - just Eingabehilfe und allgemeine Verwaltung
