Can I use more than 15W charger for my galaxy device which has 15W charging capacity?

Your charger should have following:
Input voltage of 100-240V
Output voltage 5V
Output current 3A

With the above specs you can charge your device without any harm.
*BUT IT IS RECOMMENDED TO USE GENUINE SAMSUNG ADAPTER AND CABLE*

May be you can but if your phone does support high watt it uses 15 watt from higher watt charger. And remember charge only with Samsung official charger Otherwise your charging pin may get damage.
