Either wait for One UI 6.1 which will be polished (But will release around March or April 2024 after launch of S24 series) or simply downgrade to One UI 5.1 using Odin and disable software update feature to strictly stick on 5.1.

Yes Want To Do Same but Manually It's not possible and service centre can't downgrade to One UI 5.1.
Don't have and additional device like mobile or laptop to backup data.

You can smoothly downgrade to 5.1 just by doing some research. I have downgraded to 5.1 and stick there for 2 weeks, only updated again to see if any improvements in November update on my S23U.
I will downgrade today again to 5.1 using Odin.
Only thing is annoying that Samsung forcefully sends you notifications of One UI 6 available or may b if you enabled auto download option then update will be automatically downloaded again and you'll unfortunately have to upgrade. There is a way to get rid of this issue. After you downgrade to 5.1 simply disable Software Update app (package name: com.wssyncmldm) from ADB.
