If I wanted to restrict internet access to one of a app of my phone. For example, I just want my WhatsApp pretending like "there is no internet in my phone".
However, I still want to use the rest.
If anyone can shed some light on this please. I'd really appreciate.
Thanks in advance.
Regards.

Yes, possible.... just install dataguard no root firewall spk from play store and disable wifi and mobile data for any app you want.
There are many such firewall apps, choose yours.

Go to Connections->Data Usage-> Mobile Data Usage - Select the App - Stop the option of "Allow Background Data Usage".
Third party Apps available on PlayStore but all are doing above steps indirectly so better to use default option of your smartphone.

I wanted to do the same.. I kept that app in deep sleep mode and it appears to be working. I may be wrong and may be this plan won't be suitable for your needs.. But still leaving this note if anyone find this useful.
