Is there any way to roll back to one ui 6.0
Currently I am at one ui 7 beta 2.
Issue is performance, camera and battery were downgraded little by little with each monthly update.
I used a friend's s23 and believe me it was taking better pictures, had better SOT and all.

Yes u can but I have no idea about it, I think roll back includes flashing it on your own and it is risky, if you mess up your entire device is cooked, then you have to get it to service center for repair

You can deregister/withdraw your phone from Beta programme.
After Deregistering/withdrawing, you will get an Software Update in the Settings.
Just Install the Update and You will be on Stable version.

Don't forget to take backups.

Withdraw from the Beta Program:
Open the Samsung Members app on your phone.
Go to Settings > One UI Beta Program status.
Tap on "Withdraw" and follow the on-screen instructions.
