One ui 7 icons on an s22+ running one ui 6.1

What does it mean if I have apps that have updated and the icons now look similar to those that come with one ui 7 but am still on one ui 6.1

It means nothing, One UI 7 compatible phones will have apps updated to their One UI 7 version, even if you're on 6.1

Im not even getting the update and my Icons have changed aswell

Yes it does that. I think they do that so it minimises the size of the update to an extent.
