Currently, I am utilizing the One UI 7 beta program on my Galaxy S24. Upon the release of the stable One UI 7 version, will it be necessary to discontinue the beta program and revert to One UI 6.1, or can I directly download the stable One UI 7 update?

The last Beta closer update will be the stable version of One UI 7.0 update so you can directly update your's device to stable version update/Beta closer update. Beta closer update is stable version of One UI 7.0 update. So please don't bothered about this.
