Even a guy with hobby of porting rom did a good job of Porting one UI 7 to his S8 and as Samsung is Glorifying their S25 line with one UI 7 AI marketing phone to new users with just an OS update and incremental hardware update 

as a samsung S23 user this don't feel like android now
