I have been using samsung M31 since past few years. Today one by one my apps stop working out the blue. It appears as a grey android icon with some long name below it . Could you please tell me why this is happening and a possible solution?

The probability is low assuming your phone is not infested with malware. Your phone has device care which you can use to check.
Finally if you do a factory reset the phone is wiped clean except for factory installed software. Always backup before proceeding for a factory reset.
