S26 series will come with 8.5 out of the box. Then gradually it will will be rolled out to other devices. Also depends if Samsung want to make 8.5 a feature to sell S26 series like they did with S25 & UI7. In that case it will be delayed even more and most probably S26 will have all features of it. Others will get a 90% of it.
The beta program will start in December 2025 for the S25 and later expand it to other models Although Samsung has not released any list yet but you can expect a stable ONE UI 8.5 in second quarter of 2026 after the launch of S26 and Samsung never says the exact date so be patient until you get notified
