Unwanted system app uninstall and phone being official

Is there any way to uninstall unwanted system app? And after that will my phone not receive any further update like one ui?

I've also removed some bloatware apps and I am still getting updates. I used this tool which uses adb.

Just make sure that you don't remove any critical system app
