The latency of the S pen has increased. Is anyone also facing the same issue? Is it because of the update or the tab memory?

It could be because of both, but you can't reverse the update, so try keeping your phone memory to around 70% for optimal usage.

It might be because of the storage capacity. Clear the unwanted files and cache memory for smooth functioning.

How to Reset S Pen
Please follow the below steps:

Step1: Navigate to the Apps screen and tap on Settings.
Step2: Tap on Advanced features.
Step3: Tap on S Pen.
Step4: Tap on Air actions.
Step5: Tap on More.
Step6: Tap on Reset S Pen.
