There is no official way to Undo or Redo on Android till now.

like if I accidentally erase two lines of text, on iPhone I could shake the phone, and select "undo" basically equivalent to ctrl-z in Windows.
It was available even before ios8 as i remember.

There is an app called inputting +

To do this undo/redo function in Android install the app from link

Undo and Redo

Once Inputting is running, you’ll see it as notification in your notification panel.

The app tracks everything you type and everything you edit. Everything happens in the background and you don’t need to worry about it till you actually need to undo/redo what you wrote. In that case, tap the notification and Inputting+ shows up as a pop-up window.

It has additional functionality to
Find and Replace.

Has clipboard (disabled in Android 10)

Naturally, you are probably worried that it will take your data and send it to a remote server.
Don’t worry, Inputting+ does not have access to the web, it is a local app.

These are the permissions it asks

(Google keyboard has an option to undo text you just deleted with a swipe of delete button)

you can argue that
It's built into the OS.
Attach a keyboard to your phone via an OTG cable and Ctrl + Z all you want.
