The beta program for S25 Ultra is full. Although Samsung has not released any list yet but you can expect a stable ONE UI 8 in October/November 2025, and Samsung never says the exact date, so be patient until you get notified

Why would you want to join the Beta? Samsung can't even keep its stable versions stable.
