Hey, I've got a Samsung S24 Ultra, and I'm using a Belkin 65W charger with a 240W cable. But for some reason, my phone is only charging with super fast charging instead of 2.0. Do you have any idea why that might be?

I think it is taking only 25 watts. Try to charge with the original cable and the Belkin charger

The original cable supports only 25 watts, i.e., super-fast charging.
If you want super-fast charging 2.0, buy a 45-watt original Samsung charger, which includes a 5-ampere cable.

I also know that Belkin is a good brand but it does not mean that the charger is 65 watt so your phone will support that. Every phone brand support only 15 watt from different charger brand.
