I use hdr10+ on my s10+, it adds a little more fidelity to video colors. Hevc video creates videos with less file size but equal quality as normal video. Try experimenting with them. And use as you like.
HDR video needs conversion while sharing so always share hdr videos from gallary otherwise they'll look faded or dark on other apps.
