Hi , 
I'm getting very poor battery life in S23 . It's been 11 days since I hav bought this phone. I don't have heavy usages . Mainly WhatsApp and instagram is what I use . Still getting only 5hr SOT barely. 
Other people I know are getting good battery life . Am I having a defective piece? Should I return this?

It is fairly a new device. I was also in the same boat when I purchase my phone and I was thinking to return it because the battery backup was not good and also the phone was heating with minimal tasks.
I purchased in April and now it is almost August so now my phone is performing much better, less heating and also the battery backup has improved so give it some time your phone will put the apps which you are not using in sleep or deep sleep accordingly and will learn your usage pattern so just wait for few months.
For your reference my device offers around 7 to 7.5 hrs of SOT on wifi (5G off) and around 4 to 5 hrs of SOT on mobile network LTE

Okey . Thats 7.5 hours on light usage?
Adaptive battery was on already
Now I turned on adaptive Power saving as well . So let's see .

Not light but normal usage. Casual gaming, lot of web browsing and calls.
I won't recommend adaptive power saving. I also enabled it initially to get good backup however, it keep screen on 60 hz randomly after sometime and doesn't switch back to 120 hz when needed.
I disabled ram plus which helped me to improve the backup.

Your's device is very new so please give it's some time. After some time and after some updates all is well. So please don't bothered about this issue now. your device is new so first few days it will understand your usage patterns and then it will settle to optimal performance then you will get good battery life and performance no need to worry
