The stable version of One UI 8 for the S23 series has begun to be released in various regions, including India. However, the rollout is being done in phases, with beta testers often receiving the stable build first. Since you have left the beta program, the process to receive the stable version may differ.

If you have already left the beta program but have not yet received the stable update, you may need to manually roll back to the previous official version of One UI using the Samsung Smart Switch application on a PC. This process typically involves a factory reset, so it is crucial to back up all your data beforehand. Once you have rolled back, your device should be able to receive the stable One UI 8 update through the standard software update process by checking for updates in your device settings.

Please note that the availability of updates can vary by model, country, and network operator. If you continue to experience issues, please visit a local Samsung Service Center for further assistance.

Not sure about exact date of stable version for beta exit users.
There is one option now, you can able to downgrade from beta to one ui 7.. and then update to one ui 8 in PC using smart switch application.
