Galaxy SOne UI 8 is extremely new (or still in Beta/early rollout) and you need to get One UI 7 (Android 15) first.
What to do:
1. Use Smart Switch: Install the Samsung Smart Switch desktop program on a computer and connect your phone. This often bypasses geographical restrictions for updates.
2. Check Manually: Go to Settings > Software Update > Download and install.
3. Use a VPN: Connect to a US VPN and then check for the update.
