For One UI 6.1 on S23 series Samsung released it before 28th of March 2024 after 3-4 months and almost 9-10 Beta versions 10th being the stable. 6.1 Beta received a bugfix and update every week during initial days then every 10-12 days during the last month. And Major Android 14 update was pre-released as One UI 6.0
For One UI 7 on S24 series Samsung kept the Major Android release for One UI development. UI 7 received a bugfix update almost every month or 20 days or so. Starting in december or nov end I don't remember exactly. It started rolling out on 7th after 6 betas with major bugs.
We can compare the difference in both of these Update releases. And to be honest One UI 6.1 optimization for S23 series was far better and reported just few bugs compared to UI 7 on S24 series which still has many major bugs tht even rollout has been halted due to possible lockscreen UI bug.
