Can anyone tell me why the Samsung S24 device automatically transfers from 5G to 4G networks when the device is in hot conditions?

Look if you go to Setting > Connections > Mobile Networks ; then you will see the option i.e. network mode for sim .
It will be automatically selected for 5g/lte/3g/2g(auto connect) and sarcastically you can't change it to 5G only. So that in my experience there is no option to keep 5G only mode active in flagships also. You have to go with this.
In an other scenario
Airtel sim have NSA(non standalone i.e it will fluctuate from 2g to 5g depending upon networks) 5G so fluctuations are frequent but Jio have SA(standalone i.e only 5g if the network reception is good in your area otherwise 4g) 5G So the fluctuations may be minimal but is there...

How can i resolve from this issue? Cause i use more mobile hot-spot for PC and want better network coverage.

Do not charge while using a hotspot
And try to keep the phone in cool conditions
May be external cooler or simply keeping in front of Fan or AC

If you want to charge anyway, use USB tethering and turn off fast charging
