Received software update from samsung for Galaxy m21 2021 edition.

Update highlight-

December security patch.

Now what are these different patches for all months like last time I got was in June does thar mean all these months I was unprotected?

Yes and the December update only for December month.

The monthly / quarterly patches are security patches along with device stability and performance improvements. Maybe your phone model did not need update till now.
