So UI 7.0 was bad for my Samsung A53 5G now UI 8.0 is here hounding me should I upgrade or keep ignoring the update ready to install pop ups?

If One UI 7 was bad for you. Install One UI 8 maybe, just maybe it would be better and improve your device
