Have you setup Bixby routines?
Also try removing the camera short cut from lock screen for few days to see if still that happens?

In settings, goto Apps. Tap the 3 bots in top-right. And select Permission manager. Now tap on Camera and check which apps are using the camera. It should show you last accessed time. Check if any app that you didn't use but using your camera at a given time.

To address the concerns you have with your device, we recommend the following steps:

Open the Settings app on your device.
Tap on "Apps."
Locate and tap on the three dots in the top right corner of the screen.
Select "Reset app preferences."
Tap on "Reset."

Additionally, please perform the following steps to check camera permissions:

Open the Settings app.
Tap on "Apps."
Once again, tap the three dots in the top-right corner of the screen.
