You can't adjust the brightness level of AOD after updating to OneUI 6.1.
Find down the proof.
Please Samsung, fix that on the next update.

I am having the exact same issue as this. Can't see where to adjust the brightness of the AOD. Everything else seems to be the same as before in terms of the clock style I had, but I can't adjust the brightness of it for some reason as there is not an option to do this.

I can't even change the clock style on the OneUI 6.1 anymore. You can see on the picture attached above that the option is not there.

Have you tried adjusting the display brightness on the quick panel to see if it affects AOD brightness?

I doubt they take feedback from the community, so
Contact Samsung by opening the Members app, go to Support on the bottom right corner and scroll untill you see Error Report. Click on it and follow the steps

I think adjusting the display brightness also adjusts AOD brightness.
