There is no option to lock apps in the default settings of the Samsung Galaxy S23 Ultra. However, there are a few ways to lock apps on your S23 Ultra.
One way is to use the Samsung Secure Folder. The Secure Folder is a separate area on your phone that is protected by a different PIN or password than the rest of your phone. You can move apps into the Secure Folder to keep them private. To enable the Secure Folder, go to Settings > security and privacy > Secure Folder.
Or you can use a third party software
