Why I'm not even getting the beta version of one ui 7, how are these YouTubers are getting all these updates and the beta versions??

Beta updates are being pushed for selected regions only. If you are from those regions, you might have received the Beta update. However, now the Beta for One UI 7 is stopped.

Samsung is pushing Stable One UI updates , which will be received by the users as per schedule for their region & eligible devices. Hope this clears your doubts.
