At the moment, Samsung hasn’t officially rolled out One UI 8 yet. The Galaxy S25 Ultra was just announced recently, and it ships with One UI 8 (based on Android 16). Typically, Samsung starts beta testing the next One UI version (like One UI 😎 around late summer or early fall (August–October).
